Bavarian Carrots

Bavarian Carrots Shopping List:

1 pound carrots, pared and cut in 2½-inch pieces
1 tablespoon sugar
3 slices bacon
1 large onion, peeled and quartered
2 apples, pared, cored, and quartered
½ cup chicken stock
½ teaspoon salt
¼ teaspoon pepper
Pinch nutmeg

Bavarian Carrots Preparation Instructions:

1. Place carrots horizontally in the feed tube and slice with slicing disc.
2. In a saucepan, cover carrots with water and add sugar; cook until barely tender. Drain thoroughly.
3. Meanwhile, in a large saucepan, cook bacon until crisp, reserving drippings. Drain well on paper towel. Using steel blade, process until coarsely chopped.
4. Still using steel blade, process onion until chopped. Saute in bacon drippings until golden.
5. Slice apples with slicing disc. Add sliced apples and chopped bacon to onions and cook together for 5 minutes. Add cooked carrots and toss gently. Add chicken stock, salt, pepper, and nutmeg and simmer for 5 minutes.
