Tomato Meat Sauce

Tomato Meat Sauce Shopping List:

1/4 cup olive oil
1/2 cup chopped onion
1/2 pound beef chuck
1/2 pound pork shoulder
7 cups canned tomatoes with liquid, sieved
1 tablespoon salt
1 bay leaf
1 can (6 ounces) tomato paste

Tomato Meat Sauce Preparation Instructions:

1. Heat olive oil in a large saucepot. Add onion and cook until lightly browned. Add the meat and brown on all sides. Stir in tomatoes and salt. Add bay leaf. Cover and simmer about 2 1/2 hours.
2. Stir tomato paste into sauce. Simmer, uncovered, stirring occasionally, about 2 hours, or until thickened. If sauce becomes too thick, add 1/2 cup water.
3. Remove meat and bay leaf from sauce (use meat as desired). Serve sauce over cooked spaghetti.

Tomato Sauce with Ground Meat: Follow recipe for Tomato Meat Sauce. Brown 1/2 pound ground beef in 3 tablespoons olive oil, breaking beef into small pieces. After removing meat from sauce, add ground beef and simmer 10 minutes longer.
