Curried Veal and Vegetables

Curried Veal and Vegetables Shopping List:

1 pound veal for stew (1-inch cubes)
2 cups water
1 teaspoon salt
3 medium carrots, pared and cut in quarters
½ pound green beans
2 large stalks celery, cut in ½-inch slices
3 tablespoons butter or margarine
2 tablespoons flour
½ teaspoon curry powder
¼ teaspoon salt
Cooked rice
Fresh parsley, snipped

Curried Veal and Vegetables Preparation Instructions:

1. Put veal into a large saucepan with water and 1 teaspoon salt. Cover, bring to boiling, reduce heat, and simmer 1 hour. Add carrots, green beans, and celery. Cover, bring to boiling, and simmer 1 hour, or until meat is tender.
2. Remove meat and vegetables from broth with a slotted spoon; set aside. Reserve broth.
3. Heat butter in a saucepan. Blend in flour, curry powder, and ¼ teaspoon salt. Heat until bubbly. Add reserved broth gradually, stirring until smooth. Bring to boiling, stirring constantly, and cook 1 to 2 minutes. Mix in meat and vegetables. Heat thoroughly.
4. Serve over rice. Sprinkle with parsley.
