Veal Parmesan

Veal Parmesan Shopping List:

2 cups Tomato Meat Sauce
1 ½ to 2 pounds veal round steak, cut about ½ inch thick
1 ½ cups fine dry bread crumbs
½ cup grated Parmesan cheese
3 eggs, beaten
1 teaspoon salt
¼ teaspoon pepper
¾ cup olive oil
6 slices (3 ounces) mozzarella cheese

Veal Parmesan Cooking Instructions:

1. Prepare Tomato Meat Sauce.
2. Put meat on a flat working surface and repeatedly pound on one side with meat hammer. Turn meat over and repeat process. Cut into 6 pieces.
3. Mix bread crumbs and grated cheese; set aside.
4. Mix eggs, salt, and pepper; set aside.
5. Heat oil in a large skillet. Coat meat pieces first with egg, then with crumb mixture. Add to oil in skillet and brown on both sides.
6. Put browned meat into an llx7xl½-inch baking dish. Pour sauce over meat. Top with slices of mozzarella cheese.
7. Bake at 350°F 15 to 20 minutes, or until cheese is melted and lightly browned.
