Chafing Dish Stroganoff

Chafing Dish Stroganoff Shopping List:

1 pound beef tenderloin, sirloin or rib, boneless, cut into 2x½x¼-inch strips
¼ cup flour
½ teaspoon salt
Pinch black pepper
3 tablespoons butter or margarine
¼ cup finely chopped onion
1 cup beef broth
1 ½ tablespoons butter or margarine
¼ pound fresh mushrooms, sliced lengthwise
½ cup sour cream
1 ½ tablespoons tomato paste
½ teaspoon Worcestershire sauce

Chafing Dish Stroganoff Cooking Instructions:

1. Coat meat strips evenly with a mixture of flour, salt, and pepper.
2. Heat 3 tablespoons butter in a large heavy skillet. Add meat strips and onion. Brown on all sides over medium heat, turning occasionally. Add broth; cover and simmer about 20 minutes.
3. Heat 1½ tablespoons butter in cooking pan of a chafing dish over medium heat. Add mushrooms and cook until lightly browned and tender. Add meat and liquid to mushrooms.
4. Blending well after each addition, add a mixture of sour cream, tomato paste, and Worcestershire sauce in small amounts. Place over simmering water and continue cooking, stirring constantly, until thoroughly heated (do not boil).
