Butter

1 cup whipping cream (preferably at least several days old)
Salt (optional)
Herbs (optional)

1. Place the blade and bowl of food processor in freezer to chill.
2. Pour whipping cream into chilled bowl and process two to three minutes, or until butter is formed.
3. Turn mixture into a sieve to remove buttermilk; reserve the buttermilk for cooking or drinking.
4. If desired, add salt or herbs to butter and blend.
5. Remove butter from bowl and pack into desired container.
6. Cover and chill thoroughly to harden.
