Diples

Diples Shopping List:

2 eggs
1 egg yolk
1 tablespoon butter, melted Grated peel of 1 orange (optional)
¼ cup orange juice
2 tablespoons lemon juice
Semolina (about 2½ cups)
½ teaspoon baking powder ½ teaspoon salt
Oil for deep frying (4 to 5 inches deep)
Honey
Cinnamon
Chopped walnuts

Diples Preparation Instructions:

1. Beat eggs and egg yolk until fluffy. Add melted butter, grated peel, orange juice, and lemon juice.
2. Mix 1 cup semolina with baking powder and salt. Stir into egg mixture. Add another cup semolina and mix well. Add remaining ½ cup semolina as necessary to make a soft dough. It will be a little sticky. Knead on a board until elastic and smooth.
3. Divide dough into 3 portions. Lighlty flour a large board and roll dough as thin as for noodles. Using a sharp knife, cut dough into 4-inch-wide strips. Cover dough until ready to fry.
4. Heat oil in a deep saucepan. When oil reaches 350° F, regulate temperature and drop in a piece of dough. Using two forks, turn in one end and roll up quickly to the other. Remove with a slotted spoon as soon as light gold in color. Drain on absorbent towels.
5. To serve, pour warm honey over the Diples and sprinkle with cinnamon and walnuts.
