Fabulous Cheese Mousse

Fabulous Cheese Mousse Shopping List:

¼ cup cold water
1 tablespoon unflavored gelatin
3 pkgs. (1 ¼ oz. each) Roquefort cheese
2 pkgs. (11/J oz. each) Camembert cheese
1 egg yolk, slightly beaten
1 tablespoon sherry
1 teaspoon Worcestershire sauce
1 egg white
½ cup heavy cream, whipped

Fabulous Cheese Mousse Preparing Instructions:

1. Soften gelatin in the cold water; dissolve completely over low heat.
2. Force the cheeses through a fine sieve, then blend in the egg yolk, sherry and Worcestershire sauce.
3. Beat until smooth.
4. Add dissolved gelatin to cheese mixture and beat until smooth. (Cheeses and other ingredients may be mixed in electric blender if desired.)
5. Beat egg white until rounded peaks are formed; fold in­to cheese mixture along with the whipped cream.
6. Turn into a 1-pint fancy mold which has been rinsed with cold water.
7. Chill until firm and unmold on chilled serving plate.
8. Serve with crackers.
