2 cups hot mashed sweet potatoes
1/3 cup hot milk
1/3 cup amber rum
¼ cup butter
1/8 teaspoon nutmeg
Dash Tabasco
1 teaspoon grated lime peel
4 egg yolks, beaten
5 egg whites, stiffly beaten
1. Beat sweet potatoes, milk, rum, and butter together until smooth. Add nutmeg, Tabasco, lime peel, and beaten egg yolk; beat well. Fold in beaten egg white.
2. Pour into a well-greased 1½-quart souffle dish. Set in pan of hot water.
3. Bake at 425°F 25 to 30 minutes. Serve at once.
