Spinach with Tomato

2 packages (10 ounces each) fresh spinach
3 slices bacon
2 tablespoons bacon fat
½ cup chopped onion
1 cup chopped fresh tomato
¾ teaspoon salt
1/8 teaspoon pepper

1. Wash spinach thoroughly. Put spinach with water that clings to leaves into a large saucepan. Cook rapidly about 5 minutes, or until tender. Drain.
2. Meanwhile, fry bacon until crisp in a large skillet. Drain bacon, crumble, and set aside. Add onion to 2 tablespoons bacon fat in skillet and cook until soft. Add tomato, spinach, salt, and pepper. Heat thoroughly.
3. Garnish with sliced hard-cooked egg, if desired.
