Spinach with Rice

1 medium onion, finely chopped
3 tablespoons olive oil
1 pound fresh spinach, washed well and drained, or 2 packages (10 ounces each) frozen leaf spinach, partially thawed
1 tablespoon tomato paste
ΒΌ cup water
2 tablespoons long-grain rice
Salt and pepper to taste

1. In a saucepan, cook onion in olive oil until translucent. Add the spinach.
2. Mix tomato paste with the water and add along with rice; cover.
3. Simmer until rice is tender (about 20 minutes). Season with salt and pepper.
