2 packages (10 ounces each) frozen chopped spinach
3 eggs, beaten
¼ cup enriched all-purpose flour
1 teaspoon seasoned salt
¼ teaspoon ground nutmeg
¼ teaspoon ground black pepper
2 cups (16 ounces) creamed cottage cheese
2 cups (8 ounces) shredded Swiss or Cheddar cheese
1. Cook spinach following package directions; drain.
2. Combine eggs, flour , seasoned salt, nutmeg, and pepper in a bowl. Mix in cottage cheese, Swiss cheese, and spinach.
3. Turn into a buttered 1 ½-quart casserole .
4. Bake at 325°F 50 to 60 minutes.
