2 small heads cabbage
2 tablespoons peanut oil
1 onion, minced
1 garlic clove, crushed in a garlic press
8 bacon slices
½ cup stock
Freshly ground pepper totaste
3 drops Tabasco
1 tablespoon butter
1 tablespoon cornstarch
1 teaspoon tomato paste
1 teaspoon lime juice

1. Remove wilted leaves from cabbage. Quarter and core cabbage.
2. Heat oil in a top-of-range casserole, add onion and garlic and saute until golden. Add cabbage pieces and lay a bacon slice on each. Add stock, pepper, and Tabasco. Bring to a boil, reduce heat, and simmer covered 15 minutes; cabbage will still be a little crisp .
3. Meanwhile, mix butter and cornstarch.
4. Transfer cabbage to a heated platter. Mix tomato paste and lime juice into cooking liquid and bring rapidly to a boil, then add butter-cornstarch mixture and stir until liquid is slightly thicker.
5. To serve, pour sauce over cabbage . Accompany with lime wedges.
