Sea Chowder

ΒΌ cup olive oil
3 garlic cloves
1 medium onion, quartered
2 bay leaves
Water to cover fish
1 cup dry white wine
Juice of 1 lemon
6 squid, cleaned and cut in pieces
Salt and pepper to taste
2 tomatoes, peeled, seeded, and diced
3 pounds fish (several kinds), skinned and boned
1 pound shrimp, shelled and deveined

1. Heat oil in a deep saucepan. Add garlic, onion, and bay leaves. Cook until onion is translucent.
2. Pour in water, wine, and lemon juice. Add squid. Season with salt and pepper. Cover and simmer 40 minutes.
3. Add tomatoes and fish; simmer 8 minutes. Add shrimp; simmer just until shrimp are cooked. Adjust seasonings. Serve at once.
