1 cup dried split green or yellow peas, rinsed
2 1/3 cups boiling water
1 quart sauerkraut, rinsed and drained
½ cup chopped mushrooms
3 cups water
Salt and pepper
1 can (2 ounces) anchovies, drained
1. Combine peas and 22/3 cups boiling water in a saucepan. Bring to boiling and boil 2 minutes. Remove from heat. Cover and let soak 30 minutes. Bring to boiling; simmer 20 minutes.
2. Cover sauerkraut and mushrooms with 3 cups water in a saucepan; cover and cook 1 hour.
3. Add cooked peas to sauerkraut mixture. Season to taste with salt and pepper; mix well. Turn into a buttered baking dish. Top with anchovies. Cover.
4. Bake at 325°F 30 minutes.

Sauerkraut with Dried Peas: Prepare Sauerkraut with Dried Peas; omit anchovies and baking. Fry 1 onion, chopped, with 1/2 pound salt pork or bacon, chopped, until lightly browned. Blend in 2 tablespoons flour and add 1 cup sauerkraut cooking liquid. Cook and stir until smooth. Mix with sauerkraut and peas; heat thoroughly.
