9 or 10 medium potatoes
½ cup warm milk
1 tablespoon butter
1 teaspoon salt
½ teaspoon pepper
Grated nutmeg
Filling:
¼ pound butter
2 egg yolks
¼ cup grated Cheddar cheese
½ teaspoon paprika
1 egg, beaten
1 tablespoon bread crumbs
1 tablespoon grated Cheddar cheese
1. Peel potatoes and boil in lightly salted water, then drain.
2. Mash the potatoes or put them through a food mill.
3. Beat in the warm milk and the butter. Season with salt, pepper and nutmeg.
4. Shape the mashed potatoes in an ovenproof dish into a volcano with a cavity in the middle like a crater.
5. Make the Filling- Melt the butter and stir in the cheese until melted. Add the egg yolks and simmer until thickened. Season with paprika.
6. Pour the filling into the center and brush the volcano with the beaten egg. Sprinkle on the bread crumbs and the grated cheese.
7. Bake in a 400°F oven for 10 minutes. Serve with fried frankfurters or sausages and bacon strips.
