Potato Cakes

2 pounds potatoes
3 tablespoons grated kefalotyri cheese
2 tablespoons chopped parsley
Salt and pepper to taste
6 eggs, beaten
1 garlic clove, crushed in a garlic press
Flour for coating
Oil for frying

1. Boil potatoes in skins until tender. Peel and mash thoroughly. Mix in cheese, parsley, salt, pepper, eggs, and garlic. Shape into flat cakes. Coat with flour.
2. Heat oil in a skillet and add cakes, a few at a time. Fry until golden brown, turning once.
