Baked Leftover Fish

3 boiled potatoes, sliced
1 ½ cups diced cooked fish
¾ cup sliced cooked cauliflower or mushrooms (optional)
2 hard-cooked eggs, sliced
Salt and pepper
1 tablespoon flour
1 cup sour cream
¼ cup water
3 tablespoons bread crumbs
2 tablespoons grated Parmesan cheese
2 tablespoons butter

1. Arrange layers of half the potatoes, fish, cauliflower, eggs, and remaining potatoes in a greased 1 ½-quart casserole. Lightly sprinkle salt and pepper over each layer.
2. Blend flour into sour cream; stir in water. Spoon over casserole mixture.
3. Mix bread crumbs, cheese, and butter together. Sprinkle over top of casserole.
4. Bake at 350°F 30 minutes.
