Strawberry Gelato Shopping List:
5 teaspoons unflavored gelatin
1 ½ cups sugar
4 cups milk
2 cups instant nonfat dry milk
2 packages (10 ounces each) frozen sliced strawberries, thawed
¼ cup kirsch
¼ teaspoon red food coloring
Strawberry Gelato Preparation Instructions:
1. Thoroughly mix the gelatin and sugar in a large saucepan. Stir in the milk and then the nonfat dry milk. Stir over low heat until sugar and gelatin are dissolved. Set aside to cool.
2. Turn strawberries and kirsch into an electric blender container; add food coloring and blend until smooth. If necessary, strain through a fine sieve to remove seeds. Stir into cooled milk.
3. Pour into refrigerator trays and freeze until firm (2 to 3 hours).
4. Spoon the amount of ice cream to be served into a bowl; allow it to soften slightly and whip until smooth, using an electric mixer. Spoon into chilled stemmed glasses and serve immediately.
Strawberry Gelato Recipe: ABOUT 2 QUARTS GELATO
Strawberry-Banana Gelato: Follow recipe for Strawberry Gelato. Omit the frozen strawberries and kirsch. Combine 2 pints ripe strawberries, rinsed, hulled, and crushed, with 3/4 to 1 cup sugar in a bowl. Mix and let stand about 1 hour. Turn half of the sweetened strawberries and 1 ripe banana, peeled and cut in pieces, into an electric blender container; blend. Add remaining berries and blend thoroughly. Strain if necessary. Mint Gelato: Follow recipe for Strawberry Gelato. Reduce gelatin to 4 teaspoons and sugar to 1 cup. Omit strawberries, kirsch, and food coloring. Stir 2 teaspoons vanilla extract and 1/2 teaspoon mint extract into cooled milk. ABOUT 1 ½ QUARTS GELATO
