Scamorze Crowned Veal with Mushrooms Shopping List:
2 pounds veal cutlets, cut about ½ inch thick
¼ cup lemon juice
½ teaspoon salt
¼ teaspoon black pepper
¼ cup butter
½ cup flour
1 egg, beaten
½ cup fine dry bread crumbs
¼ pound mushrooms, cleaned and sliced
6 thin slices cooked ham
6 ounces scamorze cheese, cut in 6 slices
6 mushroom caps, browned in butter
Scamorze Crowned Veal with Mushrooms Preparation Instructions:
1. Cut meat into 6 serving-size pieces; place on a flat working surface and pound both sides with a meat hammer. Put into a large, shallow dish.
2. Mix lemon juice, salt, and pepper together and spoon over veal. Cover and refrigerate 2 hours.
3. Heat butter in a large, heavy skillet. Coat veal pieces with flour, dip in egg, then in bread crumbs. Add to hot butter in skillet and fry about 5 minutes on one side, or until lightly browned.
4. Turn meat and arrange on each piece a layer of mushroom slices, a slice of ham, a slice of cheese, and a mushroom cap. Continue cooking about 5 minutes, or until second side is browned and cheese is melted.
5. Remove to a warm serving platter and serve immediately.
