Saltimbocca Shopping List:

4 large, thinly sliced veal cut lets
Salt and pepper
4 large, very thin slices ham or prosciutto
Dried sage leaves
Olive oil
ΒΌ cup (2 ounces) Marsala

Saltimbocca Preparation Instructions:

1. Place veal slices on a cutting board and pound with a mallet until very thin. Divide each slice into 2 or 3 pieces.
2. Season veal with salt and pepper.
3. Cut ham into pieces the same size as veal.
4. Place a sage leaf on each piece of veal and top with a slice of ham. Secure with a wooden pick.
5. Heat several tablespoons olive oil in a skillet: add the meat and cook slowly until golden brown on both sides Remove meat to heated platter and keep warm.
6. Scrape residue from bottom of pan; add the Marsala and simmer over low heat several minutes. Pour over meat and serve.
