Revani Shopping List:
1 cup unsalted butter
½ cup sugar
1 teaspoon grated lemon or orange peel
5 eggs
2 cups semolina
1 cup flour
1 tablespoon baking powder
Syrup:
3 cups sugar
1 quart water
1 cinnamon stick
Revani Preparation Instructions:
1. Cream butter with sugar and grated peel. Beat together 5 minutes. Add eggs, one at a time, beating until well blended after each.
2. Combine semolina, flour, and baking powder. Add to creamed mixture and mix together by hand. Spread in a buttered 9-inch square pan.
3. Bake at 350° F 40 to 45 minutes. Cool 5 minutes.
4. While Revani is baking, prepare the syrup. Combine sugar, water, and cinnamon. Bring to boiling, reduce heat at once, and simmer covered 20 minutes.
5. Pour syrup over cake. Cool, then slice into squares. Serve plain or garnished with whipped cream and toasted almonds or accompanied with fresh fruit.
