1 can (16 ounces) kidney beans
1/4 cup wine vinegar
3 tablespoons olive oil
1/4 teaspoon oregano
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup sliced celery
2 tablespoons chopped onion

1. Thoroughly rinse and drain kidney beans.
2. Combine vinegar, oil, oregano, salt, and pepper; mix with beans. Blend in celery and onion ; chill.
3. Serve in crisp lettuce cups.
