Sweet-Sour Red Cabbage II

1 head red cabbage (about 2 pounds)
1 ½ cups water
1/3 cup packed brown sugar
1 teaspoon salt
Dash pepper
¼ cup vinegar
¼ cup butter or margarine

1. Discard wilted outer leaves of cabbage. Cut into quarters, discarding core. Coarsely shred.
2. Place cabbage in a saucepan with water, brown sugar, salt, and pepper. Cover loosely and simmer 20 to 30 minutes, or until cabbage is tender and most of liquid has evaporated. Boil down without lid a few minutes, if necessary.
3. Add vinegar and butter; toss until butter is melted.
