Simmered Zucchini

6 zucchini (5 inches long), cut in thick slices
1 cup water
½ cup olive oil
¼ cup wine vinegar
1 parsley sprig
1 garlic clove
Salt and pepper to taste

1. Combine all ingredients in a saucepan. Bring to a boil and reduce heat.
2. Simmer covered about 8 minutes, or until just tender.
3. Let cool in the liquid. Serve hot or chilled.
