Okra with Tomatoes

2 pounds fresh okra
½ cup olive oil
1 large onion, minced
5 tomatoes, peeled, seeded, and coarsely chopped
3 garlic cloves, halved
1 teaspoon sugar
Salt and pepper to taste
Juice of 1 lemon

1. Wash okra and cut off any hard stems. Blanch in salted water for 3 minutes.
2. Heat olive oil. Add onion and cook until translucent. Add okra and cook until it begins to soften. Add tomatoes, garlic, sugar, salt, and pepper. Cook 2 to 3 minutes. Pour in enough water to cover. Cover and simmer about 1 hour, or until okra is tender. Stir in lemon juice. Serve hot.
