Gingered Turnips

2 pounds ye llow turnips, pared and cubed
1 tablespoon minced onion
1 ¼ cups Beef Stock
½ teaspoon ground ginger
½ teaspoon sugar
2 teaspoons soy sauce

1. Combine all ingredients in a saucepan; simmer covered until turnips are tender (about 15 minutes). Drain; mash turnips with potato masher or electric mixer until fluffy; adding cooking liquid as needed for desired consistency.
