Dilled Carrots

1 cup water
¼ cup white wine vinegar
1 medium onion, quartered
½ teaspoon salt
1 tablespoon dill
6 large carrots, pared and cut in thick slices

1. Bring water and vinegar to boiling. Put in onion, salt, dill, and carrots. Reduce heat and simmer 10 minutes. Cool.
2. Refrigerate in liquid until chilled.
3. Drain and serve cold.
