Composed Vegetable Platter

1 large sweet red pepper, cut in 1-inch pieces
3 large green peppers, sliced
3 medium kohlrabi, pared, cut in half lengthwise, and sliced
6 carrots, sliced
Chicken Stock
Herbed Mock Mayonnaise

1. Simmer vegetables in a covered saucepan in 1 inch of stock just until tender (about 10 minutes) . Drain.
2. Arrange red pepper pieces in center of a large round platter. Arrange remaining vegetables in circles around the red pepper. Pass the mayonnaise or spoon over vegetables.
3. The vegetable platter can be refrigerated and served cold as a salad.
