Cabbage Casserole

Cabbage Casserole Shopping List:

1 small head cabbage (1 pound)
2 carrots
1 ½ cups chicken stock or broth
5 peppercorns
1 (1 pound) can corn, drained
½ teaspoon salt
2 teaspoons soy sauce
4 hard-boiled eggs

Cabbage Casserole Cooking Instructions:

1. Remove wilted leaves and cut the cabbage in strips. Pare the carrots and cut in slices.
2. Bring the chicken stock and peppercorns to a boil.
3. Add the cabbage and the carrots and boil, partially covered, for 15 minutes.
4. Add the corn and simmer until hot, about 5 minutes. Season with salt and soy sauce. Serve with egg halves. Garnish with chopped parsley, if desired.
