Mock Hollandaise Sauce

1/2 cup Neufchatel cheese Dash salt
3 tablespoons Low-Fat Yogurt
Juice of 1/2 lemon

1. Mix all ingredients in a blender or food processor until smooth and fluffy.
2. Cook over simmering water until hot and thickened. Serve immediately or refrigerate and serve cold. Stir before using.
3/4 CUP

Mock Bearnaise Sauce: Stir 1 1/2 teaspoons snipped fresh or 1/2 teaspoon dried tarragon leaves and 1/2 teaspoon minced shallots into sauce before heating.

Mock Mayonnaise: Stir 1 1/2 teaspoons Dijon mustard and 1/2 teaspoon sugar into sauce before heating. Refrigerate until cold.

Note: The above sauces can be refrigerated up to 3 weeks.
