French Dressing

3/4 cup salad oil or olive oil
1/4 cup lemon juice or cider vinegar
1 tablespoon sugar
3/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon dry mustard
1/4 teaspoon pepper

1. Combine in a screw-top jar salad or olive oil, lemon juice or cider vinegar, sugar, salt, paprika, dry mustard and pepper.
2. Cover jar tightly and shake vigorously to blend well. Store in covered container in refrigerator.
3. Shake well before using.
ABOUT 1 CUP DRESSING

Anchovy French Dressing: Follow recipe for French Dressing. Use lemon juice. Omit salt and add 4 minced anchovy fillets. Shake well.

Lorenzo French Dressing: Follow recipe for French Dressing. Add 1/4 cup finely chopped watercress and 2 tablespoons chili sauce. Shake well.

Olive French Dressing: Follow recipe for French Dressing. Add 1/2 cup chopped stuffed olives and shake well.

Tangy French Dressing: Follow recipe for French Dressing. Add 3 to 4 tablespoons prepared horseradish and shake well.

Curried French Dressing: Follow recipe for French Dressing. Add 1/4 teaspoon curry powder and shake well.

Fruit Juice French Dressing: Follow recipe for French Dressing. Substitute orange or pineapple juice for the lemon juice or vinegar, or use 2 tablespoons of each fruit juice.

Creamy French Dressing: Follow recipe for French Dressing. Add 1/4 cup thick sour cream and blend well.

Garlic French Dressing: Cut into halves 1 clove garlic; add to completed dressing. Chill dressing about 12 hours before using to allow flavors to blend. Remove garlic before serving or when flavor of dressing is sufficiently strong.

Roquefort French Dressing: Follow recipe for French Dressing. Blend together until smooth 3 ounces (about 3/4 cup) crumbled Roquefort cheese and 2 teaspoons water. Add dressing slowly to cheese, blending after each addition.

Honey-Lime French Dressing: Follow recipe for French Dressing. Substitute lime Juice for the lemon juice or vinegar. Blend in 1/2 cup honey and 1/4 teaspoon grated lime peel.

Vinaigrette French Dressing: Follow recipe for French Dressing. Add 2 tablespoons finely chopped dill pickle, 1 tablespoon chopped chives, and 1 hard-cooked egg chopped. Shake well.

Italian Dressing: Follow recipe for French Dressing. Use olive oil. Omit lemon juice or vinegar and add 6 tablespoons wine vinegar. Reduce salt to 1/2 teaspoon. Omit sugar, paprika and dry mustard. Shake well.

Tomato Soup French Dressing: Follow recipe for French Dressing. Add 2/3 cup (about one-half 101/2-to 11 ounce can) condensed tomato soup, 1 tablespoon chopped onion and 1/2 teaspoon marjoram. Shake well.

Honey French Dressing: Follow recipe for French Dressing. Use lemon juice. Blend in 1/2 cup honey and 1/4 teaspoon grated lemon peel. For added flavor, add 1/2 teaspoon celery seed and shake well.

Chiffonade French Dressing: Follow recipe for French Dressing. Add 1 hard-cooked egg, chopped, 2 tablespoons finely chopped ripe olives, and 4 teaspoons finely chopped parsley. Shake well.

Tarragon French Dressing: Follow recipe for French Dressing. Use olive oil. Substitute tarragon vinegar for lemon juice or cider vinegar. Decrease sugar to 1 teaspoon. Add 1 clove garlic, cut into halves, 1/4 teaspoon Worcestershire sauce and 1/8 teaspoon thyme. Shake well.
