Cheese Sauce for Broccoli

2 tablespoons butter or margarine
2 tablespoons flour
1/2 teaspoon salt
1 cup milk
1/4 cup dry white wine, such as sauterne
1/2 cup grated pasteurized process Swiss cheese
Dash each white pepper and nutmeg
1 tablespoon chopped pimento (optional)

1. Melt butter and blend in flour and salt.
2. Add milk, stirring until smooth; cook and stir until sauce boils and is thickened.
3. Add wine, cheese, pepper, nutmeg, and pimento, if desired. Stir over low heat until cheese is melted.
4. Spoon hot sauce over cooked broccoli spears.
