Rice Salad with Assorted Sausages

1/3 cup white wine vinegar
1 teaspoon lemon juice
1/4 teaspoon French mustard
1 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup salad oil
3 cups cooked enriched white rice, cooled
3 cups finely shredded red cabbage
1/2 cup raisins
1/2 cup walnut pieces
Greens
Link sausage (such as bratwurst, smoky links, and frankfurters), cooked

1. Put vinegar into a bottle. Add lemon juice, mustard, salt, and pepper. Cover and shake. Add oil and shake well.
2. Combine rice, cabbage, raisins, and walnuts in a bowl; chill.
3. When ready to serve, shake dressing well and pour over salad; toss until well mixed.
4. Arrange greens on luncheon plates, spoon salad on greens, and accompany with assorted sausages.
