Lobster Salad

6 cups diced fresh lobster meat, chilled
3 hard-cooked eggs, mashed through a sieve
1 large scallion, minced
1 small leek, finely chopped
2 teaspoons tarragon
1/2 teaspoon thyme
2 garlic cloves, crushed in a garlic press
2 cups mayonnaise
1 tablespoon capers
Juice of 1 lemon
Cucumber, sliced paper thin Tomato wedges for garnish

1. Combine all ingredients except cucumber and tomato. Adjust seasoning.
2. Spoon into heated pastry shells, a lobster cavity, or on a bed of lettuce. Garnish with cucumber slices and tomato wedges.
