Greek Salad in Peppers

1 large tomato, chopped green onion, sliced
1/8 teaspoon salt
1 teaspoon snipped fresh or
1/2 teaspoon dried basil leaves
1 tablespoon fresh lemon juice
4 small green peppers, cored
1/2 cup crumbled feta cheese
8 anchovies, drained and rinsed
8 lemon wedges

1. Mix tomato, onion, salt, basil, and lemon juice; refrigerate covered 1 hour.
2. Spoon half the tomato mixture into green peppers; layer cheese over tomatoes. Spoon remaining tomato mixture over cheese. Arrange 2 anchovies over top of each pepper. Serve with lemon wedges.
