Christmas Eve Salad

1 cup diced coqked beets 1 cup diced tart apple, not peeled
1 cup orange sections
1 cup sliced bananas
1 cup diced pineapple (fresh or canned)
Juice of 1 lime
Oil and Vinegar Dressing Shredded lettuce
½ cup chopped peanuts Seeds from 1 pomegranate

1. Drain beets well. Combine beets, apple, oranges, bananas, and pineapple. Refrigerate until ready to serve.
2. Add lime juice to beet-fruit mixture. Add desired amount of dressing and toss until evenly mixed and coated with dressing.
3. To serve, make a bed of shredded lettuce in salad bowl. Mound salad on top. Sprinkle with peanuts and pomegranate seeds.
