Broiled Chicken in Lemon Juice and Oregano

2 broiler-fryer chickens, cut up
½ cup olive oil
Juice of 2 lemons
¼ cup oregano, crushed
Salt and pepper to taste

1. Rinse chicken pieces and pat dry.
2. In a bowl, make a marinade by combining olive oil with lemon juice and oregano. Dip each piece of chicken into the marinade. Season with salt and pepper. Marinate for several hours, or overnight if possible.
3. In a preheated broiler, place the chicken fleshy side down. Broil about 6 inches from heat about 15 minutes, or until brown, basting frequently. Turn once. Broil until done.

Note: The marinade may be served as a gravy with cooked rice or noodles.
