Eggs Creole

Eggs Creole Shopping List:

¼ cup chopped onion
½ cup finely diced green pepper
1 tablespoon butter or margarine
1 can. (8 ounces) tomato sauce
1 jar (4 ounces) whole mushrooms, (undrained)
¼ teaspoon thyme
¼ teaspoon salt
¼ teaspoon pepper
4 eggs
English muffins, split, toasted, and buttered

Eggs Creole Preparation Instructions:

1. Cook onion and green pepper in butter in cooking pan of a chafing dish over medium heat about 3 minutes.
2. Add tomato sauce, mushrooms, thyme, salt, and pepper to onion and green pepper; mix well. Heat to simmering.
3. Break eggs, one at a time, into a saucer and gently slip egg into the hot mixture.
4. Simmer, covered, over low heat about 5 minutes, then place over simmering water and heat, covered, until egg whites are set.
5. To serve, place an egg on each English muffin half and top with sauce.
