Crepes Benedict Shopping List:

12 eggs
2 tablespoons butter or margarine
8 thin slices boiled ham, heated
8 dinner crepes
1 cup hollandaise
Salt
Pepper

Crepes Benedict Preparation Instructions:

1. Beat eggs with salt and pepper to taste.
2. Melt butter. Soft-scramble eggs in butter.
3. To assemble, put 1 slice of ham on each crepe and spoon eggs on top. Fold crepe and ham over eggs and serve topped with warm hollandaise.
