Cheesy Potato Fondue

Cheesy Potato Fondue Shopping List:

3 cups sliced pared potatoes 3 cups water
1 tablespoon butter
1 tablespoon flour
1 ½ cups milk
¾ cup coarsely grated Parmesan or Romano cheese
2 egg yolks, fork beaten
¾ teaspoon salt
½ teaspoon cayenne pepper Cooked ham, cut into cubes Cherry tomatoes, halved Zucchini

Cheesy Potato Fondue Preparation Instructions:

1. Cook potatoes in a small amount of water until soft (about 15 minutes). Drain, reserving the water; sieve or rice potatoes.
2. Melt butter in a 􀀍arge fondue saucepan. Add flour and cook 1 or 2 minutes without browning.
3. Stir in potatoes with reserved water and milk. Blend until smooth and simmer 10 minutes, stirring occasionally.
4. Stir in cheese and beat in egg yolks. Continue beating until mixture is smooth, hot, and thick. Stir in salt and cayenne.
5. Serve warm with ham, tomatoes, and zucchini for dippers.
