Delicate White Cake Shopping List:

2¾ cups sifted cake flour
1 tablespoon baking powder
¾ teaspoon salt
1 cup vegetable shortening
1 ½ teaspoons vanilla extract
1 ½ cups sugar
1 cup milk
8 egg whites
½ cup sugar

Delicate White Cake Preparation Instructions:

1. Sift flour, baking powder, and salt together.
2. Cream shortening with the extract and the 1½ cups sugar, beating until mixture is fluffy.
3. Beating only until smooth after each addition, alternately add flour mixture and milk.
4. In a large bowl, beat egg whites until frothy; beating con­stantly, add remaining sugar gradually and continue beating until stiff shiny peaks are formed. Fold into cake batter.
5. Turn batter into three 9-inch layer cake pans which have been lined on bottoms with waxed paper.
6. Bake at 350°F 20 to 25 minutes, or until cake tests done.
7. Cool in pans 10 minutes before removing to wire racks to cool thoroughly. Spread the filling between and on top of cake layers. Store overnight or about 8 hours in a cool place before serving.
