Veal Scaloppine with Mushrooms

Veal Scaloppine with Mushrooms Shopping List:

8 veal scallops (about 1.5 pounds)
1 tablespoon flour
¾ teaspoon salt
Pinch pepper
1 pound veal cutlets
2 tablespoons cooking oil
4 ounces fresh mushrooms, quartered lengthwise
½ cup sherry
2 tablespoons finely chopped parsley

Veal Scaloppine with Mushrooms Preparation Instructions:

1. Combine flour, salt, and pepper; sprinkle over veal slices. Pound slices until thin, flat, and round, working flour mixture into both sides. Cut into ¼-inch-wide strips.
2. Heat oil in a large wok. Add veal strips and stir-fry over high heat until golden.
3. Sprinkle mushrooms on top and pour sherry over all. Simmer, uncovered, about 15 minutes, or until tender.
4. Toss with parsley and serve.
