Crisp Cheese Crackers

¼ cup sesame seed
2 cups all-purpose flour Salt (optional)
½ teaspoon ground red pepper
1 ½ cups grated kefalotyri cheese
¾ cup butter, softened ¼ cup olive oil
2 egg yolks, beaten, for brushing
Sesame seeds

1. Combine ¼ cup sesame seed, flour, salt, red pepper, and cheese. Work in butter and oil, using hands. Mix until dough holds together.
2. Roll dough out on lightly floured board. Cut into small diamond shapes. Transfer to cookie sheets. Brush with egg.
3. Bake at 350° F about 12 minutes, or until golden.
