2 tablespoons sugar
1 teaspoon salt
1/8 teaspoon white pepper
1 teaspoon celery seed
1/4 cup cider vinegar
1 tablespoon lemon juice
1 cucumber, rinsed (do not pare)
1/4 cup coarsely chopped onion
2 tablespoons chopped parsley
1. Combine the sugar, salt, white pepper, celery seed, vinegar, and lemon juice in a bowl; blend thoroughly.
2. Score cucumber by drawing tines of a fork lengthwise over entire surface. Cut into 1/8-inch slices.
3. Add cucumber to vinegar mixture with onion and parsley; toss to coat evenly.
4. Chill thoroughly, turning several times.
