Pineapple Mint Salad

1 can (20 ounces) unsweetened pineapple chunks, drained
2 cups low-fat cottage cheese
1/2 bunch mint, snipped
Bibb lettuce
1 cup sliced celery
Mint sprigs
8 orange slices

1. Dice 1 cup of the pineapple ; mix with cottage cheese and snipped mint.
2. Arrange lettuce leaves on a platter or individual plates; mound pineapple mixture on lettuce. Arrange remaining pineapple and the celery around mounds of pineapple mixture. Garnish with mint sprigs and orange slices.
