Mustard Relish Mold Shopping List:
1 cup cold water
2 envelopes unflavored gelatin
6 eggs
1 ½ cups sugar
1 ½ tablespoons dry mustard
1 ¼ teaspoons salt
1 ½ cups vinegar
1 16-ounce can peas (about
1 ¾ cups, drained)
1 cup (about 2 medium-size) grated carrot
1 cup chopped celery
1 tablespoon minced parsley
Curly endive or other crisp greens
Mustard Relish Mold Preparation Instructions:
1. A 1 ½-quart mold will be needed.
2. Pour water into a small bowl.
3. Sprinkle gelatin evenly over cold water.
4. Let stand until softened.
5. Beat eggs slightly in top of a double boiler.
6. Blend in a mixture of sugar, mustard, and salt.
7. Add vinegar gradually, stirring constantly .
8. Cook over simmering water, stirring constantly, until mixture thickens. Remove from simmering water. Stir softened gelatin; add to egg mixture and stir until gelatin is completely dissolved. Cool, chill until mixture begins to gel (gets slightly thicker).
9. Meanwhile drain peas.
10. Lightly oil the mold with salad or cooking oil (not olive oil) and set it aside to drain.
11. Prepare carrot, celery, and parsley .
12. When gelatin is of desired consistency, blend in the vegetables. Turn into the prepared mold. Chill in refrigerator until firm.
13. Unmold onto chilled serving plate. Garnish with curly endive or other crisp greens.
