Mock Creme Fraiche

1 1/2 cups Neufchatel cheese
6 tablespoons Low-Fat Yogurt

1. Mix cheese and yogurt in a blender or food processor until smooth and fluffy. Place in small jars; cover tightly.
2. Set jars in a warm place (100°F) for 2 hours; Cool and refrigerate. Stir before using.

Note: Use an oven thermometer in making Mock Creme Fraiche, as temperature is very important. A gas oven with a pilot light will be about 125°F. Turn electric oven to as warm a setting as necessary to maintain temperature. Mock Creme Fraiche can be refrigerated up to 3 weeks.
