1 package (16 ounce) elbow macaroni (4 cups)
1 cup each sliced radishes, sliced celery and sliced sweet gherkins
2 tablespoons chopped onion
1 cup mayonnaise
1/3 cup sweet pickle liquid
1/4 cup spicy brown mustard
1 teaspoon prepared horseradish
1 teaspoon salt
1/4 teaspoon white pepper
1. Cook macaroni in boiling salted water following directions on package.
2. Drain in colander.
3. Combine the macaroni in a large bowl with radishes, celery, sweet gherkins and chopped onion.
4. Mix mayonnaise, sweet pickle liquid, brown mustard, horseradish, salt, and white pepper thoroughly in a small bowl.
5. Toss dressing with macaroni mixture. Chill.
6. When ready to serve salad, garnish with salad greens,
radish roses and gherkin fans.
