Lasagne

Tomato Meat Sauce
3 tablespoons olive oil
1 pound ground beef
1 pound lasagne noodles, cooked and drained
¾ pound mozzarella cheese, thinly sliced
2 hard-cooked eggs, sliced ¼ cup grated Parmesan cheese
½ teaspoon pepper
1 cup ricotta

1. Prepare sauce, allowing 4½ hours for cooking.
2. Heat olive oil in a skillet. Add grr.und beef and cook until browned, separating into small pieces.
3. Spread ½ cup sauce in a 2-quart baking dish. Top with a layer of noodles and half the mozzarella cheese. Spread half the ground beef and half the egg slices on top. Sprinkle on half the Parmesan cheese and¼ teaspoon pepper. Top with ½ cup ricotta.
4. Beginning with sauce, repeat layering, ending with ricot­ta. Top ricotta with½ cup sauce. Arrange over this the re­maining lasagne noodles. Top with more sauce.
5. Bake at 350° F about 30 minutes, or until mixture is bub­bling. Let stand 5 to 10 minutes to set the layers. Cut in squares and serve topped with remaining sauce.
